Instructions
Heat 1 tablespoon of vegetable oil in a wok over medium-high heat.
Add beaten eggs and scramble until just set. Remove from the wok and set aside.
Add another tablespoon of oil, then sauté garlic and ginger until fragrant.
Add the cooked rice and stir-fry for 2-3 minutes, breaking up any clumps.
Push the rice to one side and add soy sauce, oyster sauce, and sesame oil. Stir everything together.
Return the scrambled eggs to the wok, add green onions, and mix well.
Stir in optional vegetables or proteins if using, and cook for an additional 1-2 minutes.
Serve hot and enjoy your homemade egg fried rice!
Notes
For the best texture, always use day-old rice. You can customize this dish by adding your favorite vegetables or protein.
